Jerk Chicken
This is a recipe I assembled from jerk recipes on the net. It's really pretty easy, but is also quite tasty.
- 1 tbsp allspice
- 1 tbsp thyme
- 1 1/2 tsp cayenne
- 1 1/2 tsp ground black pepper
- 3/4 tsp nutmeg
- 3/4 tsp cinnamon
- 3 cloves garlic
- 1 tbsp sugar
- 1/4 cup olive oil
- 3/4 cup malt vinegar
- 1/2 cup orange juice
- juice of 1 lime
- 1 habanero pepper
- 3 scallions
- 1 cup onion
- 3 pounds chicken thighs/breasts, with bone and skin
Blend all ingredients, except chicken, in a blender or cuisinart. Trim chicken, but leave a good amount of skin on them. Marinate the chicken in the mixture for 6-24 hours - longer is better. The chicken can either be baked or grilled:
Baking: Preheat an oven to 350°F and cook the chicken in a pyrex baking dish for 45 min - 1 hour.
Grilling: I've never actually done this, but you probably want to cook the chicken on medium-low for about 30 min.
