This is good for making mac and cheese, summer sandwiches, or just for making cheese sauce to put on whatever

• 2 tbsp flour
• 2 tbsp shortening
• 1 cup milk
• 1/2 cup ? cheese

Make a roux by heating the flour and shortening in a sauce pot, till mixed and clumpy. Add the milk (or other liquid) and stir till thick. Mix in the cheese and wait until melted. You can also add salt and pepper to taste, worchestershire sauce, of dry mustard.
